There are hundreds of different types of cheese in the world. Of those, only a few can be recognized by name. Gouda cheese is one of that small number. Cheeses are described by several different standards. Whether the cheese is hard or soft, how aged it is, its color, its country of origin, the kind of milk that it’s made from and whether that milk has been pasteurized.
